Dried and Smoked Fish Business in Nigeria: How to Start (2026)

October 13, 2026
A smoked fish business in Nigeria can supply markets, restaurants, caterers and food stores that want fish with a longer shelf life than fresh. It is also a business where hygiene and smoke quality decide whether a buyer returns. Poorly smoked fish spoils, carries insects or picks up contaminants from smoke and dirty equipment. This guide covers how smoking and drying work, the kiln options FAO describes, the quality and safety points that matter, packaging, and how to reach bulk buyers. We do not give costs, yields or margins, because they depend on your fish supply, equipment and location.
Smoked fish and dried fish: the basics
An FAO circular on smoked fish in Ghana (Fisheries and Aquaculture Circular 1178, 2019) explains a useful distinction. Smoked-soft products typically have moisture above 30 percent and are eaten within a few days, while smoked-dry products are typically below 20 percent moisture and can keep for more than six months. Which you make depends on your market, your kiln and how fast you can sell. The more moisture you remove, the longer it keeps, though buyer taste and price also matter.
Steps in a smoked fish business
The FAO material does not give a single recipe, so the steps below combine its general guidance with common good practice. Confirm details with a fisheries or food-processing adviser before you scale.
- Source fresh fish and keep it cold and clean until processing.
- Prepare. Clean, gut and wash with potable water, and cut to a uniform size so pieces cook evenly.
- Load the kiln trays without overcrowding.
- Cook and smoke with controlled heat. Traditional kilns cook and smoke at the same time, which FAO notes can burn fat and increase contaminants if heat is excessive.
- Dry until the fish reaches the dryness you are selling.
- Cool, sort and pack in clean, dry packaging.
Kiln choices and smoke quality
The FAO circular compares traditional kilns, such as the Chorkor smoker and metal drum kilns, with the FAO-Thiaroye technique (FTT). It explains that traditional kilns smoke directly with firewood and unfiltered smoke, while the FTT cooks fish using fully lit charcoal and heat-retention stones in a smokeless operation, then flavours it briefly with filtered smoke, and drains fat into a collector so it does not drip on the fire. The circular says polycyclic aromatic hydrocarbons (PAHs) form from firewood smoke, from fat dripping onto the heat source, and from excessive heat on fish fat. It cites EU limits of 2 micrograms per kilogram for benzo(a)pyrene and 12 micrograms per kilogram for the sum of four PAHs. You can read it on the FAO website. The practical lesson: kiln design, fuel, distance from the heat, smoking time and cleanliness affect both quality and safety, so ask an equipment supplier or fisheries extension officer which design fits your volume.
FAO's maintenance tips for the FTT are a useful model for any kiln: clean the fat collector regularly, replace the smoke filter when it is dark, empty the ash tray after processing, and clean fish trays and kiln parts.
Hygiene, chemicals and what regulators watch
- Never use agricultural chemicals to protect food from insects. In a public alert dated 10 November 2018, NAFDAC warned against misusing agrochemicals such as dichlorvos on beans and other grains. The alert is about grains, not fish, so ask NAFDAC what applies to dried fish, but the principle is clear: do not treat food with products not approved for it. See the NAFDAC alert.
- Keep pests out. Store dried fish in sealed packaging in a dry, clean room, off the floor.
- Clean equipment between batches and keep staff hygiene rules.
- Keep records of supplier, batch and date.
SON's 2024 to 2029 list of certified food products includes smoked fish entries, so a certification route exists for the product. See our guides to NAFDAC registration and SON MANCAP certification. NAFDAC's MSME page (content current as of 24 January 2024) lists fish, except dried fish, among products excluded from its micro-scale scheme, so dried fish is treated separately from other fish. Confirm the category for your product with NAFDAC.
Packaging smoked and dried fish
Packaging has to protect against moisture, insects and handling damage. For wholesale, use clean, strong, food-grade packs or cartons that allow the fish to stay dry; for retail, use smaller labelled packs. The FAO circular notes that packaging and labelling help with price differentiation and traceability. Put the product name, weight, producer, packing date and storage advice on every pack. For export, read packaging, labelling and shelf life and check the destination's rules.
Equipment categories
- Cleaning tables, knives and potable water supply.
- A smoking kiln or oven (traditional or improved), with trays, a fuel store and a fat collector if you use an improved design.
- Drying racks or a dryer.
- Scales, packing tables and sealers, and a dry store.
Selling for a smoked fish business: who buys in bulk
- Market wholesalers and distributors who supply traders and shops.
- Restaurants, caterers and food vendors who buy regularly.
- Supermarkets that want branded, packed, labelled fish.
- Exporters and diaspora food importers, who need documents and compliant labels.

Frequently asked questions
How long does smoked fish last? FAO says smoked-dry fish under 20 percent moisture can keep more than six months, and smoked-soft fish over 30 percent moisture should be eaten within days.
What kiln should I use? Options range from traditional kilns to the FAO-Thiaroye technique. Choose by volume, fuel and the quality your buyers expect.
What is PAH? It stands for polycyclic aromatic hydrocarbons, compounds that can form in smoke and with excessive heat on fat.
Do I need NAFDAC registration? Packaged food sold under your name generally needs it. Ask NAFDAC about your product and scale.
